Melon & Prosciutto Salad


  • 1 tbs extra virgin olive oil
  • 1 tbs balsamic vinegar
  • 1 tsp Dijon Mustard 1 tsp.
  • 4 cup Arugula
  • 1 cup Cantaloupe, sliced
  • 2 oz Prosciutto, Thinly Sliced
  • 1/4 cup Parmesan cheese


    1. Place the olive oil, balsamic vinegar and Dijon mustard in a bowl. Whisk together until well combined.
    2. Add arugula to the mixture, toss to coat the greens.
    3. Top the arugula mixture with slices of cantaloupe and prosciutto.
    4. Sprinkle with parmesan cheese.
